CHAMPAGNE FORGET CHEMIN
MARIE FORGET BRUT NV 1er CRU

The Forget family has been producing champagne since 1932 and is known for their high-quality wines made from estate-grown grapes. It is a family-run winery which today is managed by Thierry Forget, a passionate 4th generation grower-producer. The winery is located in the Premier Cru village of Ludes, in the Montagne de Reims sub-region, which is famous for its chalky soils—well suited to Pinot Noir and Chardonnay. The Marie Forget cuvée is named after Thierry’s daughter, who is an integral part of the winemaking team. The grapes are sourced from four different ‘Cru’ vineyard plots from vines that have an average age of 31 years.​

REGION: Champagne, France.

VARIETIES: 50% Chardonnay, 30% Pinot Noir, 20% Pinot Meunier.

WINEMAKING: Fermentation takes place in stainless steel tanks followed by aging in old 3,000 litre oak vessels. The base wine is a blend of seven vintages. After secondary fermentation in bottle, the wine is aged for 24 months on the lees before disgorgement. The finished wine is dosed at 8 g/l of residual sugar.

TASTING NOTE: Enticing aromas of tree fruit, sweet pastries, caramel, and a salty minerality. The palate has fine, persistent bubbles, a lively acidity and long finish.
​
PAIRING: Brioche tea sandwiches with shrimp or crab meat, puff pastries filled with goat cheese and apple chutney.

2020 CÉSAR FERNÁNDEZ DÍAZ ESPANTABURROS
“Mineral-driven with tension and electricity.”

César Fernández Díaz is a small winery located in the heart of the Ribera del Duero region and produces a range of wines that showcase the unique characteristics of the region's vineyards. César’s family has owned vineyards in the region since the early 20th century and have passed down their knowledge and traditions from generation to generation. Since childhood, César remembers helping in the vineyards and learning how his family worked the vines. Today, he works with the same untrellised bush vines from vineyard plots that contain several different grape varieties to create a ‘field blend’. His wines strive for four characteristics: minerality, acidity, elegance and austerity. Clarete (Clairet in French and Claret in English) is a rose-tinted wine, deeper than typical rosés. This wine is made from red and white grapes from 70-75 year old organically farmed vines planted at 850-900 m of elevation.​

REGION: Ribera del Duero, Castilla y León, Spain.

VARIETY: Tempranillo, Garnacha, Bobal, Albillo Mayor.

WINEMAKING: The grapes are hand-picked and sorted, followed by 12-36 hours of maceration before natural fermentation in stainless steel tanks. The wine is aged for 12 months in neutral French oak barrels to add complexity and structure. It is bottled unfined and unfiltered.

TASTING NOTE: A beautiful deep salmon colour with aromas of strawberries, cherries and wet stone minerality. A rich and juicy wine, backed by electric acidity. A gastronomic wine— a must-have with food!

PAIRING: Cured salmon with pickled onions, a fresh summer salad with strawberries and citrus vinaigrette.

2020 BASTIDE DU CLAUX "LE CLAUX"
“Pure. Vibrant. Complex.”

Bastide du Claux was founded by Sylvain Morey, the son of Jean-Marc Morey, an admired vigneron in Chassagne-Montrachet, Burgundy. Sylvain wanted to expand his horizons and fell in love with the lesser-known region of Luberon in the Southern Rhône. During this time, he was able to purchase interesting, low-yielding old-vine parcels that were no longer valued, and today, produces high-quality wines that authentically represent the region. The picturesque Luberon region is known for its favourable climate and diverse terroir for grape growing. “Le Claux” is a 5.5 acre site situated at 300-350 m of elevation producing low yields. Sylvain believes in maintaining tradition while also showing respect for the environment, and implements organic and biodynamic practices. The resulting wines are high quality, and well-balanced. Approximately 4,000 bottles are produced.​

REGION: Luberon AOC, Southern Rhône, France.

VARIETY: Syrah.
​
WINEMAKING: All of the fruit for Sylvain’s wines are hand-harvested, with a rigorous selection made in the vineyard. The grapes are de-stemmed and fermented at low temperatures before aging in barrels and concrete vats for 18 months. The wine is kept for an additional 6 months in concrete to soften the wine.
​
TASTING NOTE: Pronounced aromas of red and black fruit, with deeper notes of black pepper and flint. The palate has smooth tannins with a long finish.
​
PAIRING: Duck confit with mashed potatoes and savoury herbed gravy, or mushroom risotto with cracked pepper.​​​
