Bodegas Luis Pérez

Bodegas Luis Pérez is a family-run winery in Jerez in the southwest of Spain, renowned for its unfortified Sherry wines. The winery was established in 2002 by Luis Pérez Rodriguez, a professor of enology at the University of Cádiz. Today the winery is overseen by Luis’ son, Willy Pérez.

The wines produced by Luis Pérez are terroir-driven, with the utmost respect for each of the 4 vineyard plots (or pagos) that produce fruit of unique quality that are vinified separately. These vineyards contain the various forms of albariza, the characteristic white reflective soils made up of marine deposits, silica and lime.

La Escribana

Translated as “the scribe,” La Escribana is made from Palomino Blanco, sourced from the southwest facing Pago de Macharnudo Bajo. The grapes are hand-harvested, typically in August, loaded in small crates and brought to the winery under optimum conditions.

 

The gently pressed juice is fermented at low temperature and then aged for 12 months under flor, a layer of yeast, that protects the wine from oxidation and allows it to age biologically. This process gives the wine its characteristic aromas of bruised apples and almonds. To produce Fino sherry, wines aged biologically are fortified, however, for La Escribana, known as a 'vino de pasto', the wine is left unfortified.
