Bodega Vinificate

Vinificate is a play on words that literally translates to ‘vinify yourself.’ The winery is run by two brothers, Miguel and José Gomez in the province of Cádiz in the southwestern tip of Spain. Miguel and José are former chemists who released their first wine in 2011. They have a simple philosophy of allowing the wines to capture the soul of this unique terroir - the proximity of the ocean, the warming (Levante) and cooling (Poniente) winds and the unique white albariza soils.

Miguel and José work closely with growers in Chiclana, Jerez and Sanlúcar de Barrameda to produce a range of white and red still wines, in addition to white, rosé and red sparkling wines. We are delighted to work with Bodega Vinificate and bring our members a taste of this unique part of Spain!

Mahara Blanco Dorada

As shown on the beautiful label, Dorada is sea bream. The wine expresses the essence of the ocean and its natural food pairing. It is made with 100% Palomino, a neutral, low-acid variety from 90-year-old vines in Sanlúcar de Barrameda, north of Cádiz. The wine was fermented in food-grade plastic containers with ambient yeasts. It was aged for 9 months in clay amphoras, giving the wine unique complexity, texture and flavours from this micro-oxygenated maturation environment. It was bottled with the addition of a miniscule amount of sulphur.
